THE INGREDIENTS OF OUR RECIPES: FROM A TO Z


The raw materials used by CLAS are sourced from qualified suppliers who are checked periodically

Each delivery is checked upon arrival and checked according to the established procedures. Deliveries are constantly monitored subsequently during the storage phase and up to their final use in production.

Everything is done to guarantee maximum quality and heightened food safety in each recipe which is created and produced.

CLAS also enjoys a truly authentic location: being in the heart of the region where Pesto was bornLiguria and where you can breathe genuine air which is rich in knowledge, flavours and traditions every day.

 

Basil PDO

ORIGIN

Grown exclusively in North Italy, outdoors or in greenhouses. Origin in conventional agriculture or, when required, from organic farming.

 

CHARACTERISTICS

Free from defects, bright green and an intense fragrance (free from extraneous notes), typical of the fresh product.

SUPPLY CHAIN

The basil supply chain starts with choosing the most suitable land for sowing, which is essential to maintain better the olfactory and organoleptic structural characteristics of the crop. The basil is cut overnight evenly. Only the first cut of the plant is used, to the maximum of 20 cm, to ensure a sweeter taste and consistency with less fibres.

Collected and transported immediately, it is processed early in the day (washing, spinning, manual sorting, draining part of the water, grinding with the addition of oil, salt and acidity regulators and stored in cold storage).

The harvest, processing, packaging and transport are carried out according to the strictest hygiene standards and in full compliance with the HACCP plan.

 

Basil Genovese PDO

CHARACTERISTICS

The Denomination Protected Origin (PDO) is the European recognition  which indicates an agro-alimentary product in which the entire production cycle of the raw material takes place in a well-defined geographical area, which cannot be reproduced elsewhere.

The recognition of Genovese Basil PDO took place in 2006 when Ligurian basil was awarded the above-mentioned PDO.

Such a protected species is characterized by precise characteristics regulated by the Disciplinare di Produzione of Genovese Basil PDO.

 

HALVED AND DRIED RED TOMATOES

CHARACTERISTICS

FRESH TOMATOES

Consistency: good
Colour: red varying from light to darker
Aroma: characteristic of the product, free of extraneous notes
Taste: Characteristic of fresh tomato, no strange aftertaste

SUPPLY CHAIN

FRESH TOMATOES

The tomato supply chain starts from a careful selection of land for sowing, essential to the success of the crop. In fact, the tomato prefers temperate climates and long exposure to sunlight.
The minimum temperature for germination is 12 ° C, for the flowering 21 ° C.
CLAS, building on its know-how in the search for raw materials with optimum characteristics, is present in all stages of the supply chain.
This ensures a harvest which complies with European labour standards.

Grana Padano PDO

ORIGIN

CHARACTERISTICS

Hard cheese, cooked, slow ripening, made with cow's milk with coagulation agent, acidity of fermentation.

Colour: white straw.
Taste: fragrant and delicate.
Structure: slightly grainy

 

Pecorino Romano PDO

ORIGIN

Made exclusively in the areas authorized by the Consortium.

CHARACTERISTICS

Hard cheese, cooked, made with fresh whole sheep’s milk.

Colour: white ivory
Taste: Aromatic, pungent, slightly salted
Structure: slightly grainy, soft, not crumbly

 

Parmigiano Reggiano PDO

ORIGIN

Made exclusively in the areas authorized by the Consortium.

CHARACTERISTICS

Hard cheese, cooked, slow ripening, made with partially skimmed cow's milk.

Colour: from pale straw to straw.
Taste: fragrant and delicate.
Structure: slightly grainy

Appearance: oblong in shape and uniform

Colour: ivory to cream, uniform
Aroma: fresh and distinctive, absence of strange odours
