INGREDIENTS

(Serves 4)

4 slices wholemeal sandwich bread
2 spoons of vegan mayonnaise
1/2 ripe avocado, sliced
1/4 red onion, thinly sliced
1 ripe tomato, thinly sliced
4 radishes, thinly sliced
4 leaves green lettuce

PROCEDURE

Toast bread.

To assemble sandwich, spread vegan mayo on the toasted bread slices.
Then top slices of avocado, onion, tomato, radishes and lettuce.

Top with other piece of bread. That’s it!



DISH PREPARATION

Could be made ahead of time (up to a few hours), but best when fresh.
