INGREDIENTS

(For 12 servings)

3 eggs

80 ml of olive oil

120 g of milk

1 teaspoon of salt

1 tablespoon of sugar

250 g of flour

1 teaspoon instant yeast for pizza

2 tablespoons of Parmesan cheese

3 tablespoons of liquid red pesto

200 g of raschera cheese

 

For decoration:

Spreadable cheese

Black olives

PROCEDURE

Take a large bowl and put all the liquid ingredients, so eggs, milk, olive oil and red pesto, stir and keep aside. In another bowl put the dry ingredients: salt, sugar, flour, baking powder and parmesan, mix everything and then pour into the bowl with the liquid ingredients. Mix everything with a wooden spoon until you have a homogeneous mixture.

Add the diced raschera, mix them and then divide the mixture into muffin cups. Cook the muffins in a preheated oven at 180 ° C for about 30 minutes.

When they are cold, you can decorate muffins to make them even more appetizing for your children. Fill a sac-a-poche with a bit of cheese, cut the olives into a small pieces. Draw the faces with the cheese, add the eyes with the olives.
