Heat the grill after greasing with a little oil. Place the salmon fillets in the grill and cook for 3-4 minutes on each side.
In the meanwhile peel the avocadoes and cut them into thin slices. Add the lime juice and a pinch of salt flakes.
Place the grilled salmon fillets onto the serving dish. Serve with slices of avocado, some finely chopped spring onion stems and a sprinkle of pepper. Decorate with the Compagnia rocket cream and a splash of raw extra virgin oil.
You can enhance the dish by adding a piece of herb butter on the grilled salmon.
