Pumpkin "spaghetti" with edamame pesto

Ingredienti

  • a large pumpkin slice

  • 6 tablespoons edamame pesto

  • 4 tablespoons toasted pumpkin seeds

  • 4 tablespoons toasted sesame seeds

  • 2 spoons hulled hemp seeds

  • a few parsley springs

  • 2 tablespoons of extra virgin olive oil

  • salt

  • black pepper

PROCEDURE

Boil abundant unsalted water in a big pot.

Chop finely the parsley.

Use the spiralizer for vegetables to obtain pumpkin spaghetti. Blanch the pumpkin spaghetti for 3-4 minutes in a boiling water, then drain.

In a large bowl mix all the ingredients well, adding a pinch of sale and pepper for the last.



DISH PREPARATION
