Marinated grilled chicken skewers with kebab sauce

INGREDIENTS

(For 4 servings)

 

1 tablespoon smoked paprika

1 teaspoon cayenne pepper 

2 teaspoons oregano leaves, finely chopped 

2 garlic cloves, crushed

1 teaspoon sea salt flakes 

2 tablespoons extra virgin olive oil 

800G chicken thigh fillets, trimmed and cut into thin striips

1 lime

 coriander (cilantro) leaves, to serve

mint leaves

2 cucumbers

4 pita breads

PROCEDURE

Preheat a char-grill pan or barbecue to high heat.

Place the paprika, cayenne, oregano, garlic, salt and oil in a large bowl and mix to combine. Add

the chicken and toss well to coat. Leave for at least 15 min to marinate.

Thread the chicken onto 8 skewers. Cook the skewers for 4-5 minutes each side or until charred

and cooked through. 

Cut the cucumbers with a potato peeler, season with salt, pepper and oil.

Grill the pita bread.

 



DISH PREPARATION

Serve the skewers with the pita bread, cucumber salad, kebab sauce, lime slices, coriander and mint leaves.
