Preheat a pan over medium-low heat.
In a bowl, whisk together the eggs, milk, cooled melted butter, salt and pepper.
Dip the brioche slices in the egg mixture on both sides.
Melt the butter in the pan, then place the brioche slices. Brown them for a couple of minutes over medium heat, repeat on the other side. Repeat with the remaining slices, adding a little butter in the pan if necessary.
Serve 2 slices of french toast and garnish with fresh goat's cheese, mango chutney, fresh ground pepper and some mint leaves. Serve immediately.
