INGREDIENTS

1 very fresh egg
1 slice of bread
1 jar of pesto aglio olio e peperoncino (pesto garlic, oil and chilli)
1 tin of baked beans ( in sweet tomato sauce ).
Bacon slices
A sprinkle of pepper
Salt to taste
Spring onion
One knob of butter

PROCEDURE

Place the bacon slices ina frying pan or under a medium grill. After 6/7 minutes turn the bacon and continue until cooked through.

Toast the slice of bread, spread with 2 spoonfuls of pesto aglio, oil, e peperoncino (garlic, oil and chilli ) Compagnia.

Melt a knob of butter in a non-stick frying pan. Break the egg and pour gently into the pan, paying attention not to break the yolk. Cook for 1 minute until the white is cooked. Cover with a lid and continue to cook over a low flame for ¾ minutes to have a liquid yolk.

 



DISH PREPARATION

Place the fried egg carefully onto the slice of bread, add the crisp bacon slices, a sprinkle of pepper and some spring onion stalks.

Serve accompanied with a generous portion of baked beans in sweet tomato sauce and a freshly-squeezed orange juice.
