Borlotti beans burger

(For 4 servings)

500 g of canned or already boiled borlotti beans

2 spring onions

parsley to taste

pepper to taste

30 gr. of breadcrumbs

1 clove of garlic

extra virgin olive oil

salt to taste

4 hamburger buns

2 tomatoes

a handful of rocket

sprouts to taste

4 cheese slices

Bell Pepper Ketchup

Clean the spring onions, garlic and parsley, and then chop finely.

Rinse the beans under running water and then drain them well.

Blend them in a coarse kitchen robot.

In a bowl add the parsley, chopped onions and garlic, and season with salt and pepper. Mix all the ingredients well.

Knead well with your hands until you have a homogeneous, soft and not excessively wet mixture.

Form meatballs and then press to form hamburgers. You can also use the pasta cup by placing it directly on the pan with the oil previously heated.

Coat the burgers on all sides with the breadcrumbs.

Heat the oil in a heavy-bottomed pan over medium-high heat and cook the burgers until they become crispy on the outside and lightly browned. Turn them only once, however the cooking time should be about 10 minutes.

Cut the buns in two, heat them lightly in a preheated oven at 200 ° C.

Take the bottom of the bun, put a bit of rocket, the slice of tomato, the bean burger, bell pepper ketchup, the slice of cheese and sprouts. Serve immediately.
